Hi, I’m Ale, and I’m really happy you’re here.

Ale’s Table is my little corner of the internet where I share the recipes I actually cook, the techniques I’ve learned over the years, and the stories that make food so special to me.

More than anything, I hope this feels like an invitation.

An invitation to cook more, to try something new, and to discover how rewarding it is to prepare a meal for yourself or for the people you care about.

Why I started Ale’s Table

Some of my favorite memories aren’t about eating.

They’re about watching someone take that first bite.

That little moment when they stop talking, smile, and immediately reach for another bite.

I don’t think I’ll ever get tired of that feeling.

Cooking has always been my way of showing appreciation for the people around me. Whether it’s family, friends, coworkers, or someone visiting my home for the first time, my first instinct is always the same.

“Are you hungry?”

If you tell me what you’re craving, I’ll probably go buy the ingredients that same day and make it for you.

If you tell me to surprise you, even better.

Ale’s Table exists because I want to share that same feeling with more people, even if we’re separated by a screen.

How it all started

I started cooking when I was around eight years old.

Not because someone taught me.

Mostly because I got bored of eating the same meals.

I started experimenting with whatever ingredients we had at home and try reinventing the dish I had in front to see could come out.

Back then I didn’t have a phone, so no YouTube or recipes to follow. If I ate something at a restaurant that I loved, I’d go home and try to recreate it from memory.

I’d imagine the flavors, think about what ingredients might be inside, and just start cooking.

Sometimes it worked.

Sometimes it absolutely didn’t.

But every meal taught me something.

Eventually I started cooking for my mom and the people who worked at her store just because I wanted them to try what I had made.

Seeing people genuinely enjoy something I created became one of my favorite things in the world.

That feeling has never gone away.

What you’ll find here

I simply love good food.

In fact, every year on my birthday, the only thing I really hope for is a memorable breakfast, a different lunch, and a unique dinner. For me, sharing great food has always been more meaningful than receiving gifts.

Here you’ll find recipes that are approachable, flavorful, and designed for real life.

Some are quick weeknight meals.

Some are perfect for hosting family and friends.

Some are healthier options for your busy weeks.

Others are dishes that are just fun to make because cooking should be enjoyable too.

Along the way I’ll also share kitchen tips, techniques, meal prep ideas, ingredient guides, and little things I’ve learned that make cooking easier and more enjoyable.

My philosophy

I don’t believe cooking has to be complicated.

One of the biggest misconceptions is that you need expensive equipment, fancy ingredients, or years of experience to make something delicious.

You don’t.

Cooking can be as simple or as ambitious as you want it to be.

Sometimes dinner takes fifteen minutes in an air fryer.

Sometimes it’s a slow Sunday recipe that fills the house with amazing smells for hours.

Both are worth making.

My goal isn’t to impress you.

It’s to help you feel confident enough to cook without overthinking every step.

Because the more you cook, the more you’ll trust yourself.

Truth be told, I rarely follow recipes myself. I look at the ingredients, picture how I want the final dish to taste, and start cooking. I also don’t enjoy measuring every ingredient because, for me, it takes some of the fun and creativity out of cooking.

So I want to make it enjoyable for you.

Why “Ale’s Table”

People close to me call me Ale.

The table has always meant something more than a place to eat.

It’s where conversations happen.

Where birthdays are celebrated.

Where families gather after long days.

Where friends stay longer than they planned because nobody wants to leave.

That’s what I want this website to feel like.

A place where you’re always welcome.

A place where you can learn something new, find inspiration, and maybe discover your next favorite meal.

There is always a seat for you at my table.

A little about me

My name is Alejandro, but close people call me Ale.

I’m currently working as a software engineer. I have Computer Science degree, and I’m continuing my learning journey by pursuing a Master’s degree.

I was born in the heart of the Dominican Republic, and I now call the NYC metro area home.

Outside of cooking, you’ll probably find me practicing calisthenics, taking care of my plants, experimenting and working on a new side quest.

I’ve always been a curious person. I love understanding how things work, creating something from nothing, and constantly learning along the way and learning from others.

Whether is building software or creating a recipe, the process feels very similar to me. I enjoy experimenting, improving, paying attention to details, and sharing what I learn with others.
